- Cmd Shift Space opens quick capture, once you switch it on

The one you did not expect
Cmd Option S opens a playable snake game. It is also offered while you wait for a long transcription to finish. This one is not productivity advice.
Changing one
Quick capture is the one row you can edit, because it is a global shortcut and has to fit around the other apps on your machine. Click the row, press the combination you want, and Grape warns you if it takes over a shortcut the app already answers to. The rest are fixed.

On mobile
Shortcuts are a desktop feature, though an iPad with a hardware keyboard gets the system level text editing shortcuts inside notes.
